🏔️ Mount Ida: A Pinnacle of Olive Oil Excellence

Mount Ida (Kazdağı) is globally recognized as one of the premier regions for exceptional olive oil. Known for its low acidity and distinctive aroma, the olives of this region have been celebrated for their rich organoleptic profile for centuries. When you experience our oil, you will notice vibrant notes of freshly cut grass, green apple, and tomato vine.

In the world of olive oil, three regions are especially renowned: the foothills of Mount Ida in the Edremit Gulf, Tuscany in Italy, and Crete in Greece. Our mission is to represent this legendary Turkish terroir with uncompromising quality.

From Soil to Bottle: A Journey of Precision

Our production begins with the land. From soil analysis to pruning, I personally oversee every stage of tree care and the production process. We harvest from 50,000 century-old trees spread across 3,500 decares. Our groves are strategically located on the sea-facing, oxygen-rich slopes of Mount Ida - in villages such as Güre, Ayvalık, and Altınoluk - where constant summer breezes and gentle terrain create the ideal microclimate for premium olives.

The Art of the Harvest

Everything begins with where and how the olive is grown. Our century-old trees are cared for with the utmost attention. In early October, while the olives are still green and rich in antioxidants, we begin our early harvest. To ensure purity, we harvest the fruit before it ever touches the ground and transport it to our facility in ventilated 20-25 kg crates. By using crates instead of traditional sacks, we prevent the olives from overheating and fermenting, preserving their pristine flavor profile.

Our Olive Farms, Our Production Facility: Total Control

At our boutique facility, we process only olives from our own groves. We do not press olives for third parties, ensuring that only the cleanest, highest-quality fruit enters our production line. This exclusive approach allows us to maintain the highest standards in the industry.

We produce our oils using a 20°C cold-press method, without adding water or using enzymes, preserving the olive's natural structure. Once extracted, our fresh oils are stored in climate-controlled cellars (18-20°C) in stainless steel tanks protected from oxygen. To ensure maximum freshness, we bottle only upon order - bringing the oil straight from tank to table.
